Chardonnay, the first half of August.
Inzolia, the first half of September.
Fermentation:
Based on the quality of the harvest, as whole or without the stalks, the grapes are pressed with a process controlled by a central pneumatic system. The fermentation occurs for a time in special thermo controlled stainless steel tanks, and later in oak barrels.
Fining:
Six months after harvest, the wine from the previous year, and kept in barriques, is mixed with the wine kept in stainless steel tanks. It is bottled and stays in a temperature-controlled cellar until distribution time which is scheduled for June of the following year.
Food Pairing:
It is ideal as an aperitif or with crustaceous and seafood dishes.
